Analog Mozzarella is an alternative to milk-based cheese where milk fat and/or milk protein are partly or wholly replaced by vegetable fats and oils.

The functional properties (Shredability, Meltability, Fat leakage, Stretchability) of Mozzarella Cheese Analogue prepared using acid casein, rennet casein, cheese curd, Modified starches and emulsifying salts.
